Lambert Chapman's Clare Taylor-Green cooks cakes for Day Two of the 'Wear It Pink' Campaign

Day two of the ‘Wear It Pink’ week at Lambert Chapman and Clare Taylor-Green entices us with two recipes of cakes being sold to raise funds for Breast Cancer.     It is not too late to join in the fun by doing something at work or at home.   Please refer to the ‘Wear It Pink’ website for further ideas.

Fairy Cakes

Ingredients:

Weigh your eggs in their shells, and use the same quantity of flour, margarine and sugar.

Instructions:

Cream margarine and sugar, and the beaten egg

Stir well, and then fold in the flour

Add any flavouring

Place mixture into cake cases

Bake at 180 degrees for about 15-25 minutes, depending on their size

Transfer to a cooling rack, and decorate once cooled.

Orange and Apple Rockies

Ingredients (Makes 14):

Oil, for greasing

4oz margarine

8oz self-raising flour

1 large eating apple

1oz dried apricots

1 oz dried dates

2 oz raisins

grated rind of an orange

3oz sugar

1 egg

1 tbsp milk

Instructions:

Preheat oven to 180 degrees and brush the baking sheet with a little oil

Rub the margarine into the flour with your fingertips until the mixture resembles fine breadcrumbs

Peel, core and finely chop the apple, chop the apricots & dates, and stir into the flour mixture with the raisins and orange rind

Reserve a couple of tbsp of sugar and stir the rest into the mixture

Beat the egg and milk, add to the flour mixture and mix until just beginning to bind together

Drop spoonfuls, well spaced apart, on to the baking sheet

Sprinkle with the reserved sugar and bake in the oven for 15-18 minutes

Transfer to a cooling rack.
