Lambert Chapman's Tracey Yeo kick starts the 'Wear It Pink' Campaign with Ginger Biscuits

Lambert Chapman’s Tracey Yeo kick starts the Wear It Pink campaign by baking some ginger biscuits.  For those of you wishing to make some of your own please refer below for the recipe:

Ingredients

  •                   50g (2oz) soft brown sugar
  •                   2 really generous tablespoons of golden syrup
  •                   50g (2oz) of margarine or butter
  •                   150g (6oz) of self raising flour
  •                   2 level teaspoons ground ginger

 

Instructions

1.     Grease a baking sheet with margarine.

2.     Put the butter, golden syrup and sugar into a saucepan and melt over a low heat stirring all the time.

3.     When all melted, allow to cool for a minute, then add flour and ginger and mix well.

4.     Take a dessert spoonful of the mixture, and roll into a ball in the palms of your hands.

5.     Put on the baking sheet flattening the ball into a biscuit shape.

6.     Cook at gas mark 5, 190C or 375F (top half of oven) for approx 12 minutes.

7.     Leave to cool, enjoy!
